The Chinese symbol for peace is compounded of two characters.
The first character is pronounced he2 and means harmony.
The second character is pronounced ping2 and means calm.
So, for Chinese people, harmony + calm = peace.
What about these two characters?
The Character for harmony is in turn made of two characters, the character for grain (any kind of cereal) and the character for mouth.
Some books say that cereals (grain and wheat), being the staples, are harmonious to the mouth ...
More likely, when everybody have to eat there is harmony.

Anyway grain has the same pronunciation of harmony (he2) so it could be that is just a phonetic compound.
The character for calm is more easily explained. The character is a drawing of a scale. Infact, that character means also level, even.
